Farms Product Descriptions
All cheeses are
made by hand in small batches with minimal mechanical
intervention. Made with fresh milk from our own free range
pastured goat herd, our award winning cheeses are “one of
a kind” owing to the soils and forage unique to the farm’s
sixty certified organic acres in Tehama County.
North Valley Farms
Cheeses are true farmstead cheeses in that they are
“single source” and can be traced back to our farm,
fields, and goats without exception!
The first
commercial goat dairy in the U.S. to earn the Animal
Welfare Approved seal, goats enjoy a long productive
healthy life, free range pasture grazing and producing
exceptional milk, which in turn produce distinguished
cheeses of elite quality.
A low temperature
vat pasteurization method is used for our fresh
pasteurized cheeses. Our cheeses do not contain animal
rennet.

Plain
Chévre: 2009 Gold Medalist/Best of Class at the
U.S. Championship Cheese Contest in Wisconsin, this cheese
received a final score of 99.3 of a possible 100 to earn
the top spot in tough national competition among the major
U.S. goat cheese producers. This cheese has a “bright”,
clean, mild taste and creamy texture.

Herbs
de Provence Chévre: 2007 Gold Medal Winner
California State Fair; 2010 American Cheese Society
Winner. A state and national level award winner. A
favorite in salad of the season or as a “stand alone” on
your favorite bread! An herb mix of Rosemary, Thyme,
Savory, Fennel with a hint of lavender this combo was the
perfect compliment to our fabulous plain chévre.

Dill
Chévre: The pairing of dill with our chévre was a
combo that “clicked” and is loved by anyone who loves
dill. The clean fresh flavor of the chévre and dill are a
delightful pair! Customers report it is their favorite
pairing with salmon or on breads and crackers.

Garlic/Chive
Chévre: Another great seasoning for our fresh
chévre that is savored in omelets, scrambled eggs, folded
into pasta, in ravioli, or enjoyed as a spread.

Cranberry/Walnut
Chévre: Our fresh chévre topped with cranberries
and walnut pieces is a holiday, breakfast, and dessert
favorite. Lovely on the plate and palate.

Feta:
2010 American Cheese Society Award Winner. A fresh Greek
Style feta. Creamy, smooth and salty with a full bodied
flavor and aged in brine.

Sun
Dried Tomato/Basil Feta: Our Award Winning Feta
with a zesty twist! Beautiful on a plate with fruit or in
a salad. Creamy texture with full bodied feta flavor
combined with tomato/basil for an irresistible taste
treat.

Marinated
Feta: Once again our Award Winning Feta paired
this time with an award winning local organic olive oil
from Isern and Sons in Oroville, California. In an 8-oz.
jar, our feta is cubed and layered with fresh garlic,
basil, peppercorns with a fresh sprig of Rosemary and a
red pepper for added flavor. Jars are ribbon tied with
country gingham or holiday ribbon. A unique party gift,
these are salad ready (just add a bowl of your favorite
greens!) or a special treat on breads or eaten alone out
of the jar!

Cottonwood
Creek Tomme: Raw Milk aged cheese. Aged a minimum
of 60 to 120 days. Traditionally made in the French Alps
and Switzerland we felt this was the perfect choice for
the milk produced by our pasture based dairy goats. As the
curd is not “washed” during the make process and the milk
is not pasteurized, the full flavors of the grasses and
plants eaten by the goats are allowed to come through to
create a smooth complex rich blend which is unique to this
farm and place. Lightly waxed rind. Limited release.

We
are especially proud of being the first commercial goat dairy in the U.S. to earn
Animal Welfare Approved Certification in
2009. Animal Welfare Approved in addition to rigorous
animal health and care standards also requires the animals
